As a classically trained chef of more than twenty years, Ben knows his way around a kitchen. He has worked in award winning restaurants in New Orleans, Baltimore, Hackensack, NJ, Washington, DC, and Dallas. It was in Dallas than Ben decided to go into business for himself, selling his chef-crafted Snowie shaved ice creations.
Ben describes his time in the kitchens fondly, but loves being able to interact with his patrons now. "Most of the time, you never get to see the happiness your food brings people. The waiters do, and front house staff does, but as a chef, you are focused on getting out the next dish. Now I can enjoy the reactions and be a little more laid-back. The shaved ice business is fun!"
"As a chef, you are not always free to come up with your own concoctions. You have to match the theme of the restaurant, make sure the ingredients are readily available and within budget, and that the owners are open to adding new menu items," Ben explains. "Regardless of which station you manage, you are always at the mercy of many deciding factors. Now, I can sit in my kitchen and imagine any frozen specialty food delight I want to start selling. The menu is mine!"
Ben knows his lifestyle change might be puzzling to some of his former co-workers. To them he says, "I love the look of excitement when I show up in the Snowie-mobile. Kids and adults alike are happy to see me. What could be better? I am constantly adding new items, like our new ice cream sundaes and Alcohol Buzz Pops. I get to attend fun festivals and events. I get to mingle with friends and guests. The shaved ice life is sweet!"
